Aroma:  Fragrant scents of maraschino cherry, cinnamon and nutmeg, vanilla and anise


Taste:  Full and balanced with soft tannins, and flavors of plum, black cherries and licorice.


Fermentation:  Manual harvesting begins during the third week of October. After de-stemming and pressing, the must macerate and ferments in stainless steel tanks for 15 days at a controlled temperature of 79˚F. Malolactic fermentation in wood.


Aging:  27 months minimum. The wine is aged for 18 months in medium-toasted French barriques, and then 9 months refinement in bottle prior to release.


Alcohol:  14.5%
