Color: Brilliant ruby red with darker red around the rim
Aroma: Complex scents with notes of blackberry, plum and sour cherry, along with sweet spices and a hint of toast
Taste: Full bodied with elegant tannins and mineral notes; lingering finish with delicate taste of ripe cherries, dark fruit and licorice
Fermentation: Grape bunches are selectively harvested by hand during the last two weeks of October. After destemming and pressing, the grapes macerate and ferment for 20 days at 75˚F.
Aging: Minimum 3.5 years. The wine is aged for 18 months in medium toasted new French barriques, with a further refinement in the bottle for a minimum of 24 months.
